The main characteristic of amaranth is its high protein content, which far surpasses other cereals (18% vs. 10-14%). At the same time, it provides a great variety of amino acids to the body, emphasizing lysine; an essential amino acid that involves all the proteins in our body. Lysine is rarely found in plant foods and is very important in the development of the human brain.

It is also a great source of calcium, which provides twice the amount given by milk.
