Yacon contains fructooligosaccharides (FOS) that can not be hydrolyzed by the human body and travel through the digestive tract without being metabolized; that is why there is no absorption of sugar by the human body. Yacon is a great source of inulin, perfect for diets low in sugar and calories, commonly prescribed to patients with diabetes.
